Big Mac Salad Low Carb. The salad dressing is best served separately.


  • 400 g iceberg lettuce
  • 400 g ground beef
  • 40 g onion
  • 120 g bacon
  • 250 g Gouda, middle-aged
  • Salt and pepper
  • 160 g Mayonnaise
  • 25 g Ketchup
  • 15 g mustard
  • 120 g gherkin
  • 15 ml cucumber liquid
  • 65 ml water
  • 1 tablespoon lemon juice
  • 10 liquid sweetener

For the salad dressing, cut the gherkins into very fine cubes. Add mayonnaise, ketchup, mustard, water and cucumber to a dressing. Add gherkins, season with lemon juice and a few drops of sweetener. The salad dressing approx. 30 min. in the fridge.

In the meantime, clean the iceberg lettuce, cut into 1 cm wide strips, wash and spin dry. Slicing the Gouda into thin pens is best done with medium-aged Gouda.

Fry the bacon crispy in a pan and place on a kitchen paper towel to drain.

Dice the onion and fry in bacon fat. Add the minced meat and roast crumbly. Season with pepper and salt. Spread half of the Gouda pens on the minced meat. Put a lid on the pan and let the cheese melt for a few minutes over low heat.

Mix the other half of the Gouda pens with about ¾ of the iceberg lettuce and place in a large bowl. Distribute the warm minced meat on the salad. Put the remaining iceberg lettuce on top, sprinkle with the bacon crumbled into pieces. Serve immediately.
