  • 3 Kg Shellfish
  • 4 teaspoon oil
  • 4 Garlic cloves
  • 1 onion
  • 4 tomatoes
  • 3 bay leaves
  • 300 ml White wine
  • 300 ml vegetable stock

  1. Wash the shells, clean them and remove any damaged or opened shells. Clean the vegetables, peel the onion and garlic and cut everything very small.
  2. Heat the olive oil in a saucepan. Sweat the vegetables, garlic, onion and bay leaves in it. Add vegetable broth, tomatoes and white wine. Season with salt and pepper and cook for 10 minutes.
  3. Put the mussels in the broth and cook for about 10 minutes in a high heat. From time to shake the pot with the mussels vigorously. Wash and chop the parsley then sprinkle over the mussels. Serve immediately with the broth.
