- 500 gr split peas
- 100 gr celery root
- 100 gr Carrots
- 1 pole leek
- 2 Onions
- 300 gr Potatoes, cooking floury
- 100 gr Bacon, smoked
- 20 gr lard
- 1 teaspoon marjoram
- 2 stems parsley
- 2 Lt water
- 8 teaspoon Vegetable broth, grained
- Salt and pepper
Time: 1 hour10 min
Melt lard in the pot at low level. Add small diced pancetta and leave slightly. Then sauté the chopped onions until they are glassy. Add diced carrots, celery and chopped leeks. Turn up the temperature and simmer briefly while stirring. Not too long, otherwise there is danger of burning.
Add one liter of water and mix everything. Now add the peas with stirring and then the remaining water. Bring everything to a boil. Then add the vegetable broth (1 tsp. Per 1/4 liter) and marjoram. Simmer at low speed.
After about 20 minutes, add the diced potatoes and simmer for another 40 minutes. Stir more often, so that nothing hangs, especially important in the last third.
Season with white pepper and a little salt. Stir in chopped parsley, feddisch.
The bacon portion can be raised up to about 200 g.
Of course you can also take unpeeled peas, but they have to be soaked for about 12 hours before. Another disadvantage is the peas in a stew, which trigger in some increased intestinal activity.
