  • 150 g rice

  • 150 g Emmentaler
  • 1 LT Vegetable juice

  1. Boil the broth, add the rice and cook for 15 min. He should then be something “al dente”. Drain the rice and allow to cool. Of course you can also take a rest from the previous day. But then do not save with the salt later. The rice should be nice and spicy.
  2. Grate cheese. Clean and grate the carrots. Whether you grate cheese and carrots fine or coarse, is up to your own taste. Finely chop the onions.
  3. Mix together rice, cheese, carrots, onions and eggs. Stir in pepper (plenty), salt and herbs. Now stir in bread crumbs until the mixture has some consistency. Then let it swell for about 15 minutes. Check that the mass under pressure in the hands can be formed into a meatball. If so, it is then easily rolled into breadcrumbs.
